When There’s No Time for a Roux… or You..
Sometimes life be life-ing, and the only thing you can make is comfort food in a hurry.
I’d be lying if I said I start my mac & cheese with a roux… every single time.
Because sometimes, baby, all I have time for is throwing everything in the pan with some cooked noodles, sprinkling on a disrespectful amount of cheese, and letting the oven work its magic.
And guess what? It still hits.
Because comfort doesn’t always come with a perfectly whisked flour base.
Sometimes it just comes from showing up, seasoning well, and baking through the chaos.
1 lb elbow macaroni
2 cups shredded sharp cheddar
2 cups Gouda shredded cheese
1/2 Colby Jack
1 cup half & half
1/3 cup cream cheese (I prefer chive and onion flavored — you won’t regret it)
3 tbsps of sour cream
2 eggs (optional, depending on which side of social media you’re on)
½ stick butter
Salt, pepper, garlic powder, smoked paprika, Cajun seasoning(season how your spirit tells you)
Directions (The Lazy, Blessed Way)
1. Boil noodles until just barely al dente. Drain.
2. Grease your baking dish
3. In a large bowl or directly in the pan, mix noodles, cheeses, creams, eggs, butter, and seasonings.
4. Stir it like somebody’s watching.
5. Top with a little extra cheese and a sprinkle of smoked paprika.
6. Bake uncovered at 375°F for 30–35 minutes until bubbly and golden.
7. Let it cool for 5–10 minutes. (Don’t rush your healing or your cheese set.)
Make it when your life is loud, your energy is low, and your spirit just needs something warm that doesn’t require you to explain anything.
No roux. No pressure. Just comfort in a pan.
