But Auntie Loren’s version? Baby. It’s fried to that perfect crisp-meets-fluff texture, filled with beef that’s been seasoned like it’s got a point to prove, and topped with a holy trinity of lettuce, tomato, and cheese. We don’t skimp, we stack.

Ingredients
For the Meat Filling:
1 pound ground beef (or your meat of choice)
½ cup diced or chopped onions
½ tsp garlic powder
1 tsp adobo seasoning
1 tsp seasoning salt
½ tsp cayenne powder
¼ cup warm water
1 tsp black pepper
1 package taco seasoning
1 tsp chipotle seasoning (optional)
For the Chalupa Shells (Makes 8):
2½ cups all-purpose flour
½ tsp salt
1 tbsp baking powder
1 cup warm milk
1½ tablespoons sugar

Notes Before You Get Started:
I like to prep my toppings first so they stay cool and fresh while I work on the shells and meat. Think lettuce, tomato, sour cream, cheese, salsa… whatever you love.
You can switch out the ground beef for ground turkey, chicken, or even a plant-based crumble. But this recipe right here focuses on my signature taco meat and homemade chalupa dough — so get ready to impress yo’self.

Directions

Season the Meat:
In a large bowl, add your ground beef, diced onions, and all the listed seasonings. Mix that up like it owes you money. Seriously — get in there and make sure everything’s well combined.

Heat a skillet over medium-high heat and cook your seasoned beef mixture until browned and fully cooked through. Add ¼ cup of warm water and let it simmer until the flavors soak in and the beef is juicy. Set aside and keep warm.

Make the Chalupa Dough:
In a mixing bowl, combine flour, salt, baking powder, and sugar. Stir in warm milk and oil until a dough forms. Knead for about 5 minutes until smooth. Cover and let it rest for 20 minutes (don’t skip this step — the dough needs to chill, literally).

Roll and Fry:
Divide your dough into 8 pieces. Roll each one into a circle (about 5–6 inches wide). Heat oil in a skillet until hot (but not smokin’). Fry each dough round until golden brown on both sides — about 1-2 minutes per side. Drain on paper towels.

Assemble and Serve:
Now the fun part. Load each shell with your seasoned meat, shredded lettuce, diced tomatoes, sour cream, shredded cheese, and any other topping your heart desires. Serve warm and watch how fast folks get quiet around the table.
